Bacon and Sausage Breakfast Casserole


Breakfast casserole.  Is there anything more satisfying or comforting than a delicious breakfast on a cold morning?  I’ll answer for you: NO.

After experimenting with a recipe I found on Pinterest, I came up with this beauty.

Full of comforting goodies: hash browns, eggs, sausage, bacon and cheese (and even some veggies) this is a definite crowd pleaser.  I am definitely bringing this to my next breakfast potluck or making it whenever I host people at my house.

This can be made the night before and baked in the morning, or made overnight in a crockpot – instructions here.

Bacon and Sausage Breakfast Casserole

Recipe adapted from here.

6-8 strips of bacon, cooked and crumbled

1 lb ground sausage, cooked. I used Neese’s

1 onion, diced

1 clove minced garlic

1 red pepper, chopped

1 green pepper, chopped

1 bag shredded hash browns

8 oz shredded cheddar cheese

12 eggs (or 1 large carton egg whites)

1 packet Hidden Valley Ranch Dip Mix

1 tsp Cayenne pepper (leave out if you don’t like spice)

1/2 tsp pepper

1/4 tsp salt

1. Spray large casserole dish with non-stick cooking spray.
Preheat oven to 375.

2. Combine vegetables and sautee until soft (about 5-7 minutes).

3. Layer: 1/2 hashbrowns, 1/2 veggies and 1/2 cheese and repeat.

4. In bowl, combine ranch mix, eggs and spices. Whisk well to combine.  Pour over casserole.

5. Bake ~45 minutes or until center is set (thermometer should read 160).

Enjoy! Serves 8-10 and will keep and reheat well.

Delicious.

Pumpkin Chocolate Muffins – A Cake Mix Recipe


Are you sick of pumpkin recipes yet?

I hope not, because this one is simply a treat.

My favorite recipes are those that are “semi-homemade” – not necessarily courtesy of Sandra Lee (even though her recipes are fabulous) but simple recipes using a time saving base (like cake mix).  This recipe is exactly that – I can’t claim ownership because I remember seeing it on Pinterest, but deemed it worth sharing again for those of you not on Pinterest.

Behold Pumpkin Chocolate Muffins.  These just scream fall comfort food.  They are so easy to make and taste great.

Pumpkin Chocolate Muffins – A Cake Mix Recipe

1 box chocolate cake mix

1 small can Pumpkin

Semi-Sweet Chocolate chips

1. Combine cake mix and pumpkin.  Mix thoroughly.

2. Scoop into lined muffin tin.  Top with desired amount of chocolate chips.

3. Bake at 350 for 12-14 minutes or until toothpick inserted in center comes out clean.

Enjoy!

Tomato Garlic Soup with Cheese Ravioli


Today I have a real treat for you.  Tomato Garlic Soup with Cheese Ravioli.  It just screams comfort food.  I actually found this recipe on Pinterest and decided to make it for myself (has anyone else had success with Pinterest recipes?).  It did not disappoint.  I made several tweaks (including ravioli instead of tortellini) and still loved it.

Tomato Garlic Soup with Cheese Ravioli

8 cups simple garlic broth (recipe here)

2 cans undrained tomatoes (I used fire roasted)

1 bag cheese ravioli

1. In soup pot, bring garlic broth to a boil.  Add canned tomatoes (including juice) to broth.  Simmer 15-20 minutes. Puree using an immersion blender (or throw in a regular blender like I did).

2. In separate pot, cook ravioli according to package instructions. Drain.

3. Place ravioli in soup bowls and ladle soup on top. Top with Parmesan cheese if desired.

Delicious! I served mine with some of my Easy Garlic Cheddar Biscuits.  I bet this would be amazing with grilled cheese.

Green Chile Chicken Enchiladas


It appears that for ONCE I have a new dinner recipe for you.

If you happen to be on Pinterest, you may have seen this recipe floating around. Well, I saw it and decided to make them for myself and after several alterations to the recipe, I think I found the perfect recipe for me.

This recipe is perfect if you love a relatively easy casserole with spice and just enough heat.  Oh and if you happen to be from New Mexico (or a huge fan of New Mexican Green Chile Cuisine) you might just love that there are green chiles in this.

Green Chile Chicken Enchiladas

10 soft taco shells
2 cups cooked, shredded chicken (I used the crockpot method).
1 tsp garlic powder
1/2 tsp cayenne pepper
2 cups shredded Monterrey Jack cheese
1 cup diced, cooked onions
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream (or plain Greek yogurt)
2 (4 oz) cans diced green chillies
1.  Preheat oven to 350 degrees.  Grease pan of choice (I used a casserole dish).
2. Combine chicken, 1 cup cheese, onions,  garlic and cayenne pepper.  Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute.  Add broth and whisk until smooth.  Move quickly so flour doesn’t lump.  Heat over medium heat until thick.
4. Stir in sour cream, ranch packet and chilies.  Mix well – until warmed.  Do not bring to a boil.
5. Pour sauce over enchiladas and top with remaining cheese.

6. Bake 30 minutes.  Broil 3 minutes until top of cheese is browned.

Cool and serve. Not the prettiest meal, but what it lacks in looks it makes up for in taste.
I love how flavorful these are – the Hidden Valley Ranch is definitely the star of the show.  I definitely need to start making more casseroles.

HOW Did I Forget To…


Ok seriously, how did I forget to post another townhouse update?

So several weeks ago, I posted about how I made an offer on a townhouse.

Well….

I GOT IT!

That’s right!  After the sellers counteroffered, I accepted.  Got all 2304983 forms signed and started the process of officially buying it.

If everything goes to plans (which at this point, it looks like it will).  I will be closing on it September 7th! I’m really excited and have been pining decor ideas like crazy.

I’m going to save pictures of the townhouse for when I move in and settle – but here are some more things that I like.  (Click the picture for source)

For instance, I have some updates that I want to make when I move in.. I’m especially excited because I will finally be able to start buying things for it.  I want to update the kitchen to look something like this.

With this granite. I love it.

My master bedroom ideas have changed multiple times now, but I know I want to pull yellow, purple and gray together, somehow.

Brittany touched upon this the other day, but Pinterest makes me feel overwhelmed and uncreative.  There are so many amazing DIY projects on there, but I am scared to undertake any as they seem pretty complicated and costly at times.  Regardless, I will keep looking at Pinterest for ideas for the townhouse.  I cannot wait to move!

A (Town) House Update


So I have some news….. If you follow me on Twitter, then this isn’t new news.

BUT

I found a townhouse that I LOVE and I made an offer!

At this point, the seller and I have gone back and forth several times, but I think we have a deal and I am just waiting on them to sign the final papers so I can begin the real process of buying (inspections, financing etc).  This just makes it so much more real, and I cannot wait to show pictures once I’m moved in.

And let’s face it – I’m excited about potentially (if everything goes according to plans) having THREE closets!

Once I know if things are a go, I will share more details – especially because it definitely differs from my original plans.

In the meantime, I’ve been pinning away home decor ideas.  Here are some of my favorites (click images for sources):

I love the colors in this spring wreath.

Wall art out of Styrofoam. Simply wrap styrofoam in fabric – so easy and genius.

I LOVE this living room. I live for light, bright rooms so I think this is fantastic.  Unfortunately, I have dark leather couches (that I love) – so maybe something like this for one of my guest rooms?

I LOVE this kitchen. If I get (fingers crossed) this place, then I will end up updating it so look similar (I hope) to this.  I love the dark/ light combination.

I think this blue for the bathroom is absolutely gorgeous – but we’ll see if I can replicate this.

This one thing that I have decided for sure – is that I will be doing my master bedroom up similar to this. I’m currently in love with the yellow/gray combination and cannot wait to incorporate it into my bedroom. Isn’t this gorgeous?

Red Velvet Cake Brownies – A Cake Mix Recipe


Ok – so who doesn’t love brownies?

I think I may have mentioned before that I have a ridiculous love for Red Velvet ANYTHING.

So when I learned that you can EASILY make brownies from a cake mix – I knew I had to try it!  I’m a huge fan of cake mix recipes (cake mix cookies anyone)- heck, I even have an entire board on Pinterest just for cake mix recipes.

This recipe was adapted from several on the internet – so feel free to change and make your own!

Red Velvet Cake Brownies

1 box Red Velvet Cake mix

1/4 cup water

1 large egg

2 tbsp oil

1. Preheat oven to 350.  Grease 8 x 10 pan with non-stick spray of your choice.

2. Combine all ingredients.  Scoop into pan (batter will be very thick – you may have to use a spoon).

3. Bake 20-25 minutes or until a toothpick inserted in center comes out clean.

4. Remove from oven and cool completely. Frost and cut.


So good! I used cream cheese frosting – per my usual. A quick, easy dessert that is sure to delight.
