Hi Everyone! I hope you’ve had a great week! I have a real treat for you today, it’s a recipe courtesy of Kyle’s Stepmother, Trish.
Have you ever had potato skins? If you have, then you know how delicious they are. If you have not, then what are you waiting for? I mean, what is not to love about them? Bacon, Cheese, Onions, Barbecue sauce and Potatoes – all in ONE tasty treat.
These are a real crowd pleaser – as soon as they came out of the oven we dug in. I highly recommend making these for any excuse you can find.
Loaded Potato Bites
2 large russet potatoes sliced thinly
1 tsp olive oil
1/4 tsp sea salt
1/2 cup barbecue sauce
1 cup shredded cheddar cheese
1/4 cup chopped scallions
4 pieces crumbled bacon
1/2 cup sour cream
1. Preheat oven to 350. Toss potato slices in sea salt and olive oil. Spread onto baking sheet in single layer – and bake for 30 minutes or until potato pieces are cooked through and slightly crispy. Remove from oven.
2. In bowl, combine cheese, scallions and crumbled bacon; stir to mix. Leaving potato slices on baking sheet, brush with barbecue sauce until each slice is coated on one side. Sprinkle cheese mixture on potato slices and bake for 10-15 minutes or until cheese is melted. Remove from oven, place slices onto serving plate and top with dollops of sour cream. Serve and enjoy.
