A crockpot of Beef Stew for the New Year


Kyle and I rolled out of bed this morning to prepare some Beef Stew in my new CrockPot (thanks Kohls!) I hope it’s ready to eat when I get home from work!

We used this  recipe for  Burgundy Beef Stew which I got from Courtney’s blog (I adapted it according to our tastes!) when I saw her recipe for this, I knew we had to try it!!!!

Into the pot went:

4 peeled and diced Yukon Gold Potatoes

4 medium carrots peeled and chopped

1 large yellow onion, diced (I LOVE onion!)

1 large (fresh) tomato diced

1 cup Charles Shaw Cabernet Sauvignon that I got from Trader Joes

2.5 pounds stew meat cut into small pieces

2 tsp dried Thyme leaves

1 tsp ground mustard (Kyle wasn’t too keen on this)

1.5 tsp salt

1/4 tsp pepper

 

1. Mix together in slow cooker.

2. Set to low, cover and cook for 8 hours.

3. After stew is cooked, mix 1/4 cup flour and 3 tbsp flour in small bowl.  Slowly stir into stew.

4.  Cover and cook for 15-20 more minutes.

 

Spoon into some pretty festive bowls and enjoy.  I cannot wait to get home and try this out… maybe with some swiss cheese?
